Potato Salad Recipe

This is a tasty and quick creamy potato salad recipe.

To make the salad, you will need the following ingredients:
  • 2 Large potatoes (2)
  • 2 hard-boiled eggs
  • ¼ cup Mayonnaise¼ cup plain yoghurt ()
  • ¼ cup chopped celery
  • 1 sprig of parsley
  • Optional: ¼ cup ricotta cheese
Here are the steps:
  1. Clean and skin the potatoes.

  2. Boil the potatoes in water until cooked all the way through (this will probably take 30 to 45 minutes) - you can check the potatoes are cooked by pricking with a fork. When the potatoes are ready, remove them from the hot water (be careful), allow them to cool and then cut into cubes with sides of just over 1 inch (2.5 centimeters).

  3. Prepare 2 hard-boiled eggs. Remove the eggs from the hot water when ready (be careful), allow to cool, the egg shells, and then dice the eggs.

  4. Prepare a sauce by mixing the mayonnaise plain yoghurt, and optionally, ricotta cheese. Clean 1 sprig of parsley, fine chop it, and then mix this and the chopped celery into the sauce.

  5. Finally, stir the chopped potatoes and diced egg into the mayonnaise sauce, taking care to ensure all the potatoes and egg are thoroughly coated.

  6. When the dish is ready, place it in the fridge, and allow to cool. You should serve the potato salad chilled - it tastes much better that way.
